Part of having a comfy and cozy home, for me anyway, is great food.  By great food, I generally mean dessert.  Do you agree?  I cook because I need to, I bake because I love to.  I don’t know if there has ever been a better time for comfort food than the last several weeks of sheltering in place at home and in many states, we’re not done yet.   I shared a video in my stories a few days ago of me making my favorite chocolate chip cookie recipe.  Did you see it?  Well, in any event, here is the recipe.  Hope you like it!

Chocolate Chip Cookie Recipe

A few weeks ago I shared a video in my stories making chocolate chip cookies.  My recipe is a riff on the old Nestle Toll House standby.

1 c butter at room temperature

1 c firmly packed brown sugar

1/2 c granulated sugar

2 large eggs

2 tsp. vanilla extract

2 3/4 c all-purpose flour

1 tsp. baking soda

1/2 tsp. salt

1 1/2 c semi-sweet chocolate chips

Cream the butter and sugars together until light and fluffy.  Add eggs and vanilla, mix well.  Mix in flour, baking soda, and salt until well combined.  Stir in chocolate chip pieces.  Scoop 1 T. of dough onto greased or lined baking sheet – I use either non-stick aluminum foil or parchment for easy cleanup.  Bake at 350F for 10-12 minutes.  All ovens vary, so edges should be golden, but the middle may still look a little pale.  Remove from oven and let sit on pan for 1 minute then remove from pan to cool completely.

These are excellent alone or made into ice cream sandwiches.  If you’re really feeling wicked, try making them a little smaller, sandwich them with buttercream and then dip the sandwiches halfway into melted white, milk or dark chocolate coating wafers.  Yum!
